Wanted to smoke something this weekend, and low and behold Baby Backs go on sale.

 

Rubbed and ready.  Trying out a new rub.  Mix of a couple I have used.

In to the smoker...  Bet I get in trouble for the smoker I'm using, but it needs a bit of a break in before August.

I would go with a Maverick ET-732 if it were me or a Thermapen if you can afford a little extra expense... Or Both...

 

Ribs are looking Great So Far...

NWDave left me his Maverick ET-73 works great. Just dont't stick the probes in the dishwasher.  They don't work well after.

For $10 more you might look at this. Thinking about picking up one myself since two of us are now smoking in the house.

Forgot to post the finished product.  Our friends did 6 racks of baked ribs, so I didn't bring them out.  Fell asleep on the grill part the next day, so they got a bit over done but still tasty.
