Just put on a 4lb turkey breast, 8lb butt. Filled the pellet smoker with hickory and maple, going to pull the breast then go to bed and let the butt roll all night. wish me luck, pic's to follow.
I am changing things up this time, I am trying with no water in the pan. Todd told me he never uses any, and i decided to give it a whirl. I am getting nervous now, I am a hour in and my butt is not dripping yet.
Dripping and moisture running off are 2 different things.
I don't use water in the pan, but usually inject my meat.
You can add moisture, but I would use a small pan, not fill the large water pan. It pumps out too much moisture, and the AMNPS or .AMNS will not smoke properly
What you'll end up with, is a lot of steam that looks like smoke.
