Last weekend i smoked ribs for my third time. First time doing the 2-2-1 method. They were by far the best ive done yet.
It seems however that by the time i took them out of the foil (the second 2) they were already done. they were falling off the bone. despite them seeming to be done i left im in for probably 45 minutes with the heat low so i could have time to put my sauce on.
why do they cook so fast? The temp was always between 215-240. I'm \still using the thermometer that came with the smoker, is it unreliable?
Also, although the ribs were awesome for hte most part, some of them were partially dry on the top. Is this just another product of them being done after 4 hours?
