Well I'm 2 for 2, this MES 40 makes it easy.

This time I took one tenderloin and rubbed it down with my spicy rub and wrapped it in bacon, the other I mixed my rub with some pineapple and mango preserves to make a sweet one. Both came out awesome and my daughter exclaimed we should never go out to eat again

 The whole family is definately enjoying my new toy.

I've never eaten a tenderloin this tender and juicy, I'm afraid the family will never want one another way again....

Oh, smoked in my MES40 ran it up to 152 internal then pulled it, probably should have let it sit for a few but it was too good looking, we cut and ate

Don't take that temp any higher unless you are probing it raw.  That meat looks perfect to me.  If you wait a while to probe, you could pull it at 145.

Thanks Venture, it was so good, the family is already asking when I'll do it again. Quick Question, if you dont probe at the start is there a rule as to when you should? How long should you wait to probe the meat? I went ahead and probed from the start which is why I took it up a bit higher before I pulled them. I also have a wireless temp unit on order from A-Maze-N to go with the included one on the MES 40 so I can monitor multiple pieces.
