Been a while since I've done a qview, chickens & butts start to look alike after a while. Be that as it may, popped for Costco ribs as a treat after a disappointing slab from the el cheapo market a few weeks back. Twenty five bucks for 9 pounds but they were nice and meaty with great flavor so I can't gripe to much. Took membrane & flap off, dry rubbed and rested overnight then did the 3-2-1 with some 50-50 Sweet Baby Rays & peach/berry Hansens mop every hour the first 3 hours, foiled with some more of the peach/berry nectar and finished the last hour with 2 more mops. Since the smoker was going threw in some fresh hocks for future bean makings as a last minute idea. First time doing hocks, look kinda good I think. One slab down.....one to go. Thanks for looking.....

And Absolutely not----I would not trust Shamus for a second!!!

He has the same look on his face my much loved departed Black Lab "Shadow" used to have, around good smelling meat !!!!

Thanks Bear....GF had to take the old Lab for his last ride to the Vet after having him 17 years about a week ago. He'd known me about 9 years. We've had Shamus about 7 months, he just turned a year old and is tipping the scale at 95 pounds. He would have NO problem scarfing down a rack o' ribs while my back was turned....lol.

Wow!--17--Long time for a Lab!!!

Shadow was only 12 1/2.

We spoiled him, giving him table scraps with his food. I used to give him little pieces of my steak, but I'd eat the fatty part, because it was bad for dogs!!

Looks great Willie. Did you do anything special to those hocks. I see them all the time at my asian market, and been wanting to smoke some for a while.
Thanks and no...didn't do anything to them, just threw them on the racks. The ones you buy are so salty I just wanted to go with a natural kinda thing. I didn't even try them yet, been at work etc. but may dig a piece of meat off the front to check it out later.
 
Those are totally awesome... Great Bearview and the meat looks to die for...
