You forgot the last, MOST IMPORTANT STEPS!!! You're suppose to cut off about 3 or 4 ribs, vac seal them and throw them in the freezer. When they are frozen completely, pack them in an insulated box with some dry ice. Then, ship them (pre-paid naturally) to me for OFFICIAL DOMAPOI TASTING & APPROVAL. This should be done by all who smoke baby back ribs!!!

I can't be sure until I taste then but they sure look good.

LOL.  I completely forgot that all important step of packing up a few ribs and sending them out to SMF members for random double blind taste testing.  I'll have to remember that next time. 

By the way, the potato, surprisingly, was not that great.  I think the smoking really toughened up the skin.  Inside was pretty good, but not delicious.

I've got a pack of Sam's baby backs in my fridge right now...can't wait to throw them on the smoker tomorrow!  hope they turn out half as nice as yours did.......

If you're a Cosco meat guy, see if the Cosco you shop at has the round tip beef roasts. I've recently done a couple of those and they were fantastic. Now I have to check my Cosco for your ribs and have a whack at them. Super job on yours!

jcglenn - your comment had me rolling out of my chair.  Read the quote to my wife. Surprisingly, she did not find the adultery-based joke as funny.  I suggest you appologize to your ribs.  Maybe take them out for a nice smoke.

Capt Turbo - Thanks for the recommendation.  I'll definitely check out Costco for round tip roasts and search the forum here for some recipes.  Just remember the Costco Ribs come 3 full racks to the package (around 8-9 lbs) so plan on cooking a bunch or vacu-sealing a couple racks for later.
