Want good texas fajitas but I live in Orlando Florida

I am from South Texas and love fajitas. I moved to Florida awhile back and can't find good fajita meat. I want it already tenderized or marinated. I have tried some spanish stores but have had no luck.  It is so hard to find it like it is over there. Most grocery stores dont have skirt steak or anything. Anyone have any suggestions. I really want to grill some good fajitas like I used to have.

Well, first my condolences for moving to Orlando. Lived there for a long time and glad I got out. (Worked at Orlando Sentinel) I-4, no more.  You're probably going to have to locate your own meat and do the tenderizing yourself. I found Skirt and yes you are right, it seems to be disappearing, along with London Broil and even Beef Chuck Underblade can be used. I am sure there are some other cuts. Maybe Pops will show up and give his loads of knowledge to you. Otherwise, Orlando is Restaurant City.

Until Pops gets here, I will offer a suggestion.  If you can't get skirt steak, a flank steak is a so-so substitute.  You can always make a marinade, yours will probably be better than the one you buy.  If you grill it hot and get it off quickly and cut across the grain, no tenderizing should be needed.  If that doesn't work for you, I would look toward a mechanical tenderizing method rather than using a chemical tenderizer.

Being in latin country that would explain the shortage of skirt and flank steak. I would suggest getting to know a few butchers and maybe bring in some smoky goodness. icon14.gif

The best cut I could suggest if there's no skirt or flank steak meat available would be a shoulder clod roast or eye of the round roast cut lengthwise with the grain into thin long strips, tenderized either by Adolf's or mechanically (run through a cuber or pounded with the rough end of a mallet) then marinated.  You need long tuberous fibers so the meat will separate into strings that give the fajitas that oohhh so delicious texture and flavor, but either will be lacking the fat that the skirt has (skirt steak is the diaphram muscle).

You could butterfly a tri-tip or ask the butcher for a london broil cut.  Also check sams they usually carry skirt steak.  Hanger steak will work as well.  Good luck finding them already marinaded so once you get the meat it is going to be up to you.

You should check out the Everglades Restaurant off of International Drive in Orlando, Fl. If you live close to the area you should really check them out if you want some good fajitas. They may be a bit pricey but check them out at least once.
