I just got this unit and love it!  However, I was curious as to it's effectiveness if you put a turkey, brisket, etc. in an aluminum pan to smoke.  I've read a few recipes that always say to use one, particularly the Myron Mixon recipe book.

Does this hinder the smoking process in this unit?

IMO: You can do it, but you should flip it over to get both sides smoked.

Most of us don't do it, because of having it laying in the juices that form in the bottom, but you can put a rack under it.

Personally, I think you should look around on this site, and see how to do things without putting them in pans.

Then decide.
