We don't get steak very often on Poverty Hill,

so we have to make our own.

Had 3 lbs 80/20, added chopped onions, GBP,  and S&P.

Smoked with lump and pecan.

Here they are going in the smoker

Great!  Memories of my childhood.  Right down to the mashed potatoes and the deviled egg.  Couldn't be better.

Good luck and good smoking.

Visions of childhood exactly!! Still broke and rich with friends and family and living--so all isnt bad.  Excellent looking meal and I myself would be proud so sit at your table and feel like a king!!..

I generally like all my beef rare but I bet I could just focus on that pretty smoke ring and love my way through one of those.

  Thanks Turbo,

I like mine a little on the rare side also.

But you know how wives are

If you get a thick enough smoke ring it will look rare

Dang, Raptor you got me thinking in circles here.  We could use a separate forum for "Comfort Food".  Then I think a little more and I realize that almost everything we do is comfort food.

Thanks for a tasty post!

Good luck and good smoking.

They really are pretty and I hear what you are saying. I have been blessed in that my Sweetie has come around to realizing that rare meat has better flavor. Things didn't start out that way but I think my love of grilling an getting some smoke flavor into foods went a long way in bringing her from the dark side. People are a product of their past experiences. Some can learn new tricks and some are trapped in the old circle.

Great Q and great pictures. Thanks.
