I made 10 lbs of venison snack sticks yesterday. I used Hi-Mountain sweet & spicy seasoning then added garlic powder & cracked red pepper to the blend. I put them in the smoker for 45 min @ 150 without smoke then bumped it up to 200 with smoke until I had an internal temp of 160. Total time in the smoker was about 4 1/2 hrs. They came out great.
