So I have been tasked with cooking for the family today.  About 15 people coming over this evening around 6:00pm for dinner.

The menu for today (as far as meat is concerned) is: Pulled Pork, Beef Tenderloin, Chicken Wings, Chicken Breasts, Meatloaf, & ABT's.

I got an early start this morning about 6:00am, got the fire started in the WSM.

I got the butt rubbed & injected last night, and let it sit in the fridge overnight all wrapped up.  I was short on time, so I used a bottle of rub from Central BBQ that I picked up last time I was in Memphis.  I injected it with a little mix of Apple Juice, Sailor Jerry Rum, and a little bit of the rub.

It's pouring down rain, so this will be an interesting day...  BUT the rain can't hold me back.  I put out the pop up canopy last night..

Got the Butt on, waiting until about noon to put the meatloaf on, and then i'll put the Wings, Breasts, Tenderloin on a littler closer to dinner time.  Going to smoke them for about 1 or 1.5 hrs and then sear on the kettle.

Meanwhile, I'll just be hanging out.  I'll get some updates later.

Stuck somewhere in the Pork Plateau right now... sitting steady at 160.......

Finally got it done..  Waaaayyy too long though.  People were full, and done eating by the time I was able to get it off, and get it pulled.

The ABT's disappeared before I could get a pic..

Here are a few snap shots of what I could get inbetween people blocking all the space.

I've given up on trying to smoke the pork and eat it on the same day.  If I want it done right, I plan to smoke it one day and eat it the next.  That way, everyone is happy and nobody is sitting around with growling stomachs asking if we can "hurry" the pork along by putting it in the oven.

Glad it worked out for you, though!
