First time posting and getting the hang of Q-view. Last night I rubbed a 4.25 beef chuck roast with a light coat of EVOO and some Chef Merito's beef and steak seasoning. This morning I preheated the MES to 225 and the chuck went on at 9:15. Put a foil pan underneath with some beef broth, onions and sliced mushrooms for dipping later.

Looks like a great start!  Make sure you post the final results with the smoke ring -- commonly called "the Money Shot"!!!!!

Not sure what kind of smoke ring I'll get with the electric but I'll definitely post the end results. Hopefully it will turn out right.

Here's more on the progress. At 11:30 I added some more chips(smoking with mesquite) and draped some bacon over the top to help with the moisture.

Finally!!! After foiling at 165 then back in smoker til 205 at a total of 9 hours in the smoker and an hour of rest. Time to pull and into some chuckie tacos. I'm amazed at how moist and tender this turned out.

Looks great!  Those tacos look amazing - next time I smoke a chuckie I think I need to pull it so I can try something different like tacos!
