Need some more advice on my sausage endeavor

Well, I got my new meat grinder and stuffer from Northern Tool today. I changed my plans and decided to get the Kitchener #12 Grinder and Kitchener 5# Stuffer instead of the Cabelas 1 hp grinder and Lem 5 lb Stuffer, to start out with. Here's what I've discovered after some research. There must be a common manufacturer for many of these different brands, especially with the entry level equipment.

The Kitchener #12 grinder is the same as the Northern Tool #12 grinder. Just a lttle less money. Also, the Kitchener 5lb stuffer is the same as the Northern Tool, LEM and Grizzley 5lb stuffers. Again, for a little less money. I'm guessing they're all made by Kitchener. Princess suggested that I consider a lesser powered grinder at this time, stating that I could always sell it on ebay or here, if I ever outgrew it and wanted a higher end one. Made very good sense to me. Thanks Princess. The 5 lb stuffer, I will probably always need anyway, for smaller batches. I know I can get by with hand mixing smaller amounts for the time being too, since that's what I'm going to start out with, having never even so much as stuffed a single link before. I think that I need to start with 5-25lb batches to learn the basic skills that I will need, such as grinding, mixing, stuffing etc.

I've gotten good advice from Nepas and others on casings to use for various types of sausages. I have pink salt and some of the basic ingredients for many sausages. But, I was thinking, "what about using some of the pre-packaged seasonings offered by many of the suppliers, while I'm in the learning process?" I don't even have a clue what I like and don't like, yet. They seem pretty reasonably priced and packaged to do 25lbs of whatever sausage unless otherwise stated. I'd need to add a binder and a fermenter to general supplies and maybe a few other items, but I'd do that any way.

What do you folks think? Are the pre-packaged seasonings all that bad?  Are there any brands that others of you have tried that seemed to be pretty good? 

Just fishing for ideas, rather than jumping into the deep end of the pool before I've even had my first swimming lesson.

I've read the entire Sausage forum and have enjoyed all the great advice, ideas, pictures, tutorials and videos you folks have provided. I'm truely impressed with all of the outstanding talent here on SMF and I know I couldn't be in a better place to get the help I need.

I've seen a number of folks use the pre-packaged seasonings and they are happy with the results. Some even amend them a bit (more heat, spice or sweetener, for example) to get 'em 'just right.'

Personally i enjoy using my own spices and mixes for several reasons:

1. I know how fresh they are

2. I know exactly what I'm putting into the sausages. Some pre-packaged mixes i've seen have additional ingredients that I avoid out of necessity (wheat, for example, or MSG).

3. The learning process of determining the correct amounts for the desired results.

Been making sausage since 1987 for my home personal use and a large majority of it has been store purchase premixes. For the most part been very happy with them, but always looking for something better. I add whatever I feel is needed after trying the premixes ti suit my taste buds... About 6 years ago I found http://stores.curleyssausagekitchen.com/StoreFront.bok and have been more than happy with their premixes.

The selections Curley's have available is difficult to be matched by what I have found and the quality of the mixes are top notch. I believe every mix they sell, also have on online recipe available, with complete instructions.

I have tried many numerous mixes from them; any questions, feel free to ask.

I like to use AC Leggs brand from Columbia Spice. I like them because they dont have MSG in any of them except their Polish kit. If you want a kit its what I would use.

Most of the larger pre packaged mixes for 25 lbs can be broken down to do smaller 5 lb batches. I have found the using 6-7 Tbs mixed with 3/4 to 1 cup water work very good. When you decide to mix your own stuff there are a few sites out there that post recipies or just hit someone up for one on the forum, I'm sure they will help.

Where did you purchase your Grinder and Stuffer from?
I puchesed the grinder & stuffer from Northern Tool & Equipment. Go to the webpage and click on "list all catagories" on the bottom right of the Home page. Click, then scroll down the list to Food Processing.

Yes, the LEM 5lber does have metal gears. Lem also sells a set of metal gears for the 5lber for about $30, which will fit the Kitchener, Northern Tool and Grizzley 5lbers, because they are all the same model of grinder. The only difference is that the one sold by LEM already comes equipped with the metal gears intead of the plastic/nylon gears that the others are sold with. That's why the other models are all less expensive. I was guessing that maybe they were all manufactured by Kitchener, but maybe they're all made by LEM instead. At any rate, they are all the same model of stuffer.

Well, I guess I stand corrected then. I haven't seen the Grizzley. Boy, it sure looks the same. I was basing it on what the LEM rep told me. I looked at a LEM 5lber today, just out of curiosity and the gears sure looked like they would fit the Kitchener that I have. Maybe not the same manufacturer after all. Leave it to us "rookies" to be shootin' our mouths off on stuff we haven't got a clue about. LOL

First time I have ever heard this, I have always heard they interchange with LEM's replacements. Been looking at purchasing a 5 lb. with stripped out gears with the thoughts of just replacing them with LEM's metal replacements....

Then ya still have a bargain stuffer. I checked out the LEM stuffer and I don't see how the gears won't work for my Kitchener. They look to be exactly the same size.

I have a 30 lb. Sausage Maker stuffer, so I don't need a second, just thought for small batches it would make clean up easier. But I can pick up this 5 lb. with stripped gears for $25.

Yes the main shaft looks the same. When i took the shaft out the threads are just a hair tighter than the threads on the gears.

Guess they have to get ya somewhere...HA

Not trying to bash or call anyone down, just trying to help.
