Came out pretty good! Did 185 for 5 hours with an eye of round. Need to tweak the seasoning a bit! Needs more Chimayo Chile powder!

I had to do a double take---First pic I saw looked like a pan full of snakes !!!   Yikes !!!

Then I focused a little better!

I kept reading about people using toothpicks for stringing up the meat. on the racks. I have a ton of skewers from my fruit carving so I just skewered up the meat and spaced it out to drop in between the racks. Worked like a champ!
