Chicken 3 ways.....

Since beef is so darn expensive now I have been eating a lot of yard bird lately. Decided to shake it up a bit with three differant marinades.

The one that I was really itching to try was juice from 2 limes, 1 cup Valentina's Extra Hot sauce, and 1/4 cup vinegar. Second bag got a cup of Yoshidas, and the third bag was 1 cup Sweet Baby Rays mixed with 1 cup vinegar.

3 hrs. in the WSM at 250° with a little bit of mesquite. From left to right: Valentina 1/2 chicken, Yoshidas 1/2 chicken, and BBQ thighs.

.... and a nice plate of goodness! That is my plate with Valentina's Hot Sauce.... it was awesome!

Well.... the thing is.... I was a piggy and just ate the half chicken that had the hot sauce on it.... lol, but according to the wife and kids the Yoshidas and the BBQ ones were good. I really, really liked the hot sauce one, it had a nice tang to it, but the lime gave it a very bright citrus note as well.

Very nice! Why not through in that arichoke?
I assume you mean throwing it into the smoker?...

Honestly I have never thought of trying that.... lol. I always put them in a pot with about 3" of water in the bottom and let them cook on med.
