I scored a great deal on Country Style Spare Rib's at a local market, and tossed them into the New Branfels upright for dinner. Kept the seasonings simple: Salt, pepper, brown sugar. Here they are all dressed up for the dance...
Smoked them at a steady 240* with ash wood until they hit 168*.
These were done in just about 3 hours, and the juice poured out when I probed for the final temp!
The Money Shot: not as much smoke ring as usual, but really tasty and moist! My wife cut up some fresh strawberries into apple sauce, and we served all of that with rice and peas for a well-rounded, tasty meal.
