Got some elk being done for some spicy sticks.

Before

Elk in blue bowl, 80/20 GB in green.

Going to cover and fridge, stuff smoke tomorrow (gots some honey do's)

  • 5 pounds of lean burger (85/15) or venison (If using venison, add 10-15% 5 pounds of lean burger (85/15) or venison (If using venison, add 10-15% beef or pork fat.)
  • 1 tsp cure #1
  • 1-1/2 tsp Black pepper
  • 1-1/2 tsp Red chili pepper
  • 1-1/2 tsp Garlic salt
  • 2 tsp. Accent (optional) Takes some of the game from the elk.
  • 1 tsp Cayenne pepper (add more for additional heat)
  • 1/2 tsp Paprika
  • 2 tsp Crushed red pepper
  • 1/2 Cup cold water
  • 3 Tbsp Salt
  • 2 tsp Sugar
  • 2 tsp Hot sauce
  • 1 Tbsp encapsulated citric acid (optional) Mix in by hand.
  • Collagen casings 17 – 19mm
 
I got some help stuffing the elk sticks today. My 10 yr old Army brat granddaughter did the cranking. I said we will just rack em this time instead of hanging, she said huh?

I wanted these dryer than normal. Sorta between a semi dry and dry Landjaeger type.

I did it....WOOO HOOO....And they will get yer blood flowing to....Not to hot, just right

This recipe is now in my book, I can't wait to try it, probably won't use elk, but mule deer will work great for these sticks.
