I purchased the MES 40 this morning and am seasoning it now. I have been looking forward to today all week. As suggested, I will get the AMAZEN as soon as I can find it. My first attemp will be pulled pork. Got the pork butt today and will season/rub it in the morning and should be enjoying my first smoked meat tomorrow evening.

In the smoker at 7:30 am Eastern. Got people coming over to sample. I'm figuring 11 hrs @ 240F, but I am using the probe thermometer to be sure. I was as careful as I could be with all the information available here, so I have some degree of confidance.
