I was at work on Tuesday when I was approached and asked if I would smoke some pork for pulled pork. I looked at her and guess I had a look of "DUH" on my face because before I could say anything she said "we'll go get the pork on wens." So, today we went and got 6 pork shoulders between 7-8 lbs. I came home and did the dry rub, wrapped and the are taking a nap overnight in the garage fridge. I am leaving work at 230 tomorrow to smoke them starting at 400 pm, then on Friday going into work late with 6 smoked pork shoulders.
I plan on starting at 400 pm, smoking through thursday night and then foiling and put in a towel lined ice chest to keep until 1000 am friday morning when I pull them. I have to admit, I am feeling the pressure..... will be feeding about 60 people.
