Here is the formula
You are going to loose 40% to cooking. The average sandwich should be 4-6 oz. The average plate is 6-10 depending on the eaters.
You also need to adjust for kids and people who dont eat Pork. It will also depend on your sides

X4 , It's probably just me, NO I bet other think this way. If you are going to fire up the smoker and you are going to do 2 you mine as well do 3 and have plenty of left overs.

Ain't that the truth!!! 7 pounds doesn't last long between the 2 of and neighbors...
Not around my house. Maybe 6 with some left overs.
