Citrus brined Smoked Game Hens!!

Here are some game hens i did over the long weekend

Those chillies are stuffed with pepper jack cheese and i smoked them along with the game hens!!!!

I like how you did those anaheims gonna have to make them for sure. icon14.gif So what all did you put in the brine besides oranges? We have to know. confused.gif

The brine is the same one i used on my grill/smoked chicken i post a link to my older posts. its really simple but it taste so damn good!!!

And that PA Dutch Funnel Cake is an outstanding choice to finish the meal with!!!

 

All of the Fairs around here have that.

Yeah that's some homemade salsa its habanero salsa it also has some green onion in it. And thanks Bear those were some awesome funnel cakes i like the ones from the fair but i dont like there grease trap i often get sick from them lol so i just made my own and it came out awesome!!!

How long did you need to brine those little chick-a dees?

About three hours if u want to do it over night just go easy on salt.
