I found this from 2 weeks ago in my archives and thought i would share it
I had half a t-loin left in the fridge ( that had been wrapped and smoked) with my neighbor's (fpnmf) bacon and threw a quick snack together.
I had 2 boxes of Mac-n-Cheese, which i prepared by the instructions.
Layered the bottom of a pan with half.
Sliced the t-loin into ¼" slices and placed on top
Then poured the rest of the mac-n-cheese over it
It looked like it needed more cheese so i threw ½ lb of shredded sharp cheddar on top.
Smoked until golden brown

The t-loin was fork tender, and the cheese had a smokey flavor
