Depends on how many racks I'm doing and what mood I'm in sometimes I do them individually and sometimes all together and sometimes I stack them all in a large foil pan and foil over the top. Some people say that stacking them will disturb the rub and others say it doesn't. My advice is to try it both ways and see which you prefer. Either way just don't forget to add some liquid to the foil packs before you seal them up
 
I have to cut rack in two to fit on my GOSM, being that sometime, some are more ready to foil than others, I individually wrap them in the foil.

I tried foiling three racks in a metal pan with foil over the top for the first time last smoke and I loved the results. It was much less work then foiling all three individually. In the future I will be using the pan trick if I have multiple rack for sure. I did cut the three racks in half so I had 6 individual pieces. Either way you do it they should taste great. But like Piney said give both a try so you can form your own opinion.
