I rolled up a breakfast fattie for my co-workers.  Scrambled eggs, onion, havarti & cheddar cheese, and spinach wrapped in porky goodness!

Heated the slices and made sandwiches between toast or English muffin!  The breakfast of champions!!!!  Everyone at the office loves it when I bring one of these in to share, and today was no exception.

Post Mortem:  The spinach was a first -- a last second idea as I rooted around the fridge for ideas to make it unique.  It was a good idea, but I needed a lot more wrapped in the mix to make it more of a feature item for the palate.  I could easily triple the amount and it would probably be closer to the effect I was after.

Awesome James! I bet your co-workers love you. Especially bringing in a fattie, something they can't buy at a restaurant.

I have only spoiled my staff a couple of times, but they always like when I bring smoked food.  nicely done.  You almost can not overdo the spinach since it shrinks by about 75% when cooked.
