The wife and I went to Costco today. I ran across a really good deal on some baby back ribs and since I've been wanting to try my hand at some we figured why not. Ok, why lie, it was the reason we went to Costco :)

Broke out my trusty yellow mustard and rubbed them down:

After the rub I got the smoker fired up. It was really windy today here in Henderson (Vegas) so I had to keep a real close eye on the temp. My flame was blown out by the wind multiple times, but the best thing about propane is all I had to do was push the ignitor button and FLAME ON! Finally I ended up blocking the wind on 2 sides with some plywood I had sitting around.

Smoker got up to about 225-250, the applewood/maple I had in my cast iron skillet was giving off a perfect thin smoke. I ended up doing 2 hours, flipped and mopped them down, another 1 hour. then I broke out the foil for another 1.5 hrs. The ribs looked great after the foil, but I wanted a bit of char on them so I cranked the heat to 300 and pulled them outta the foil for 30 minutes.

I had a few minutes to burn while the ribs were on so I made some BBQ sauce. Didn't come out exactly like I like it, but I ran out of mustard. That's what I get for using it as my binder :)
