We are doing finger foods (veggie/fruit trays, cheese and crackers, etc.) for my daughters graduation open house.  I'm thinking about also serving quartered bacon wrapped chicken breasts.  I was thinking it would be best to smoke them whole, then quarter them for additional help to keep them from drying out.  Also I figured I may put them in the broiler for 10 minutes or so after they are done to crispen up the bacon.

Any experiences or thoughts?

I think I would quarter them up then wrap each quarter with bacon then smoke them. If you smoke them first then cut them up the bacon will probably fall off. Crisping them in the oven or on a hot grill is a good idea too. If the oven or grill is real hot, just a couple of minutes will get them crispy.

You could also dust the chicken with some rub before you wrap it in bacon and smoke it for extra flavor.

If you are going that route, why not consider doing wings or drumettes.  I have also dne some thinghs where I cut the thighs into smaller pieces and smoked them. They are pretty forgivng temperature wise. What ever way you go though, I agree with AL that you dont want to cut the bacon once it is cooked

I would cut the chicken so you can wrap it around something like a piece of pineapple then wrap in bacon, smoke till crispy, cool a bit, cut in half and serve with a dipping sauce.

I also saw one several months back where somebody sliced the breast meat into long thick chunks, dusted them in rub, spiral wrapped in bacon, and then smoked. Kinda like a chicken finger wrapped in bacon.... mmmmm.

[/quote]I did this on Sunday they camout awesome. Bacon wasn't crispy since I cooked them quite low but came out awesome none the less. I will absolutely do it this way again.

Thanks for the ideas.  I think I may try the chicken strips idea just because it sounds easier for the quantity I will be smoking.  I thought about wings, but I have already purchased the bonless skinless breasts.

I will be smoking these on Sunday.  I will try to post pics.

Sorry I missed this I would have recommended chicken lollipops cheap easy to make and every time I make them they dissapear fast.

How'd they turn out?  I bet they were a big hit.

Hey ECTO1!  Man,... How'd you be doing them there chicken lollipops?  They look great!  "Cheap" and "easy" are my kind of words.

Get Smoked!

OK, I Googled smoked bacon wrapped chicken and this thread came up. That's how I found this site. I tried this last night and it's absolutely delicious. I parcooked the bacon, so it would crisp up in the lower heat, I brined the chicken for a few hours, and put a dry rub on before wrapping the bacon.
