Harbor freight has a cheap one.Never had a problem with mine.You can look it up in the search .Some like it some don't.

I have access to a good slicer, but I prefer to slice my Hams with an electric carving knife.

It carves around the bones real nice.

Darn i have one Bear and never thought of that...i use it all the time to fillet fish.

Your ham looks delicious. Chef's choice makes several well built inexpensive slicers.

That fry job on the wild turkey breast strips sounds good too!  And I'll second the motion on the quality of the Chef's Choice products.

but, i don't understand how to do a double smoke.  and do you need to wrap up for a period of time for the smoke to draw into the meat

A double smoke is simply buying a smoked ham & smoking it again. No wrapping it will not make it any smokier.
