Ham Sale...So I Smoked One

Local Market had cured and smoked uncooked hams on sale for $.99 a pound. I couldn't pass that deal up...so a 10.3 lb ham hit my cart. 

Brought it home...trimmed the fat and into my smoker it went. No rub ..no glaze...naked.

Got the Mes rolling at 220...filled water pan..three rows in the amazen 6x8 with hickory.

{Thanks Todd for the quick shipping} and 5.5 hours later it hit 157 IT...foiled and it rose to 162 on the counter. Looks like double hickory smoked ham for lunches this week!!!

The guys at work will be happy to see me Monday morning...We will be eating ham for a few days off this.

   Funny thing about those Wisconsin folks,always Smoking something and taking it to work;always real friendly. I like that...

Thank You Old...You are right about the people from Wisconsin...Many people here don't have a lot but anytime they have extra vegetables...game...fish etc. they love to share with each other...great people. My wife and i are both blessed with good jobs...it makes sharing very easy and makes us feel great. A nice piece of this will also go to my elderly widowed neighbor...she is a great lady and fantastic neighbor.

Definitely go with the bean soup. I smoked a 16 pounder for my wife's family at Easter and I think the best thing of all was the bean soup made with stock straight from the ham bone. Just drove back and forth across WI on 94 this weekend. Counted over 100 turkeys enjoying those newly planted fields. My wife joked "yeah, the farmers are in there saying 'eat up -- Thanksgiving is just around the corner and I planted extra for you!' Smoked wild turkey is some good eating too. Try it when the gobbler holiday rolls around!

Thank you Bear...i asked you the question in your double smoked ham thread and you set me straight about double smoking a ham for incredible flavor. I left this ham unglazed and will do it the same way again. I don't really care for a sweet coating on my ham and was going for the heavy hickory flavor. A note to this...That A-MAZE-N smoker does a unbelievable job on everything i have used it on. I filled one row om one side and three on the other...lit both ends and got heavy smoke for the first hour plus..then a bit less smoke for the next  3 hours. Just a great product.

Your comment about folks from Wisconsin is so true...folks here really bust their tails and can have fun doing it...I have two different crews that work for me during the year... in two completely different businesses and i wouldn't trade them for anything.


first words out of my coworkers mouths on monday mornings is "what you smoke this weekend" always love to share the 'que
 
How true Ricky...having people complementing your que is a great feeling...sure makes the effort you put into it rewarding.

Thanks Ben...i love good homemade bean soup...that bone and a good pound or so of ham will be hitting the kettle. I'll have to try wild smoked turkey...usually we double dip breast strips in egg and seasoned flour then quick fry them in bacon grease...it is awesome this way also.
 


Double smoked is the only way to go,

After resting in the fridge overnight..the cutting begins. It really was moist ...tasty and Delicious!!! I really need a meat slicer...any recommendations on a quality inexpensive slicer anyone???
 
I have access to a good slicer, but I prefer to slice my Hams with an electric carving knife.

It carves around the bones real nice.
