That fry job on the wild turkey breast strips sounds good too!  And I'll second the motion on the quality of the Chef's Choice products.

Ham looks greatdrool.gifbut, i don't understand how to do a double smoke.  and do you need to wrap up for a period of time for the smoke to draw into the meat

A double smoke is simply buying a smoked ham & smoking it again. No wrapping it will not make it any smokier.
