2nd Smoke, First Time Ribs Q-view

Ok, here we go again. :)

I got a bit lazy with the pics this time but the basic setup is the Weber Performer 22.5" kettle, Stubbs charcoal using the minion method. Used 3-2-1 (actually 3-2-.5, they finished early)


This time I did three rows of coals in a semi circle goung around half of the kettle, then I stacked a double row on top of those. I lit 12 coals to start the whole shebang and this gave me nice range. I got her locked in at 250F and she sat there for a good 3hrs without me tinkering. I did have to add some more coals in hour 5 because I was afraid I would start to loose the heat.


here is the meat, 13 bucks for 3.75lbs.




All rubbed. I used mustard for the glue and mixed up 1/4c brown sugar, 1 tbs salt, 1 tbs garlic powder, 1 tbs onion powder, 1/2 tbs pepper, 1/2 tbs chili powder.

Let it sit for a few hours. I planned on doing this last night but apparently I'm sick so off to bed I went hoping to feel better today.





Money shots! I did a little dance when I saw the smoke ring.

Those dry ones look deadly! Good job...mine are on the WSM right now and this was such a tease. Why do I torture myself...

The fact that they came out so good is testament to the quality of advice on these forums. first.gif


I think next time I will get more aggressive with the rub. The dry were very good and smoky but the rub didn't really come through. I'm always gun shy with the spicy as the wife has very low tolerance for heat. Course she goes for the BBQ slathered ones anywhat so I'm free to do what I want with the dry ones so next time I will apply some heat. hopmad.gif

My family are also "sweet baby ray's" fans, I use it on my ribs to knock the heat down a bit, I use the same rub for my Butts as I do my ribs and they can tend to be a bit spicy.

Those are some meaty looking ribs.  I can almost smellem through the screen.
