Aloha All,

My wife likes the Farmer John brand breakfast sausage.  Does anyone have a recipe that comes close to it and be willing to share?
 
This is what they say is in Farmer John's:

Pork, vinegar, water, salt, dextrose, sugar, extractives of paprika, natural spice extractives, natural smoke flavoring.

I know it doesn't say how much of each, but I would look for a recipe with similar ingredients.

7 lbs lean meat GB
1 1/2 lbs. lean pork butt
1 1/2 lbs. pork fat
Or 10 lbs. of Ground Pork Butt if you like
4 tablespoons salt
1 3/4 teaspoons white pepper
3 1/2 teaspoons sage, ground
2 1/2 teaspoons thyme, ground
2 1/2 teaspoons nutmeg
2 1/2 teaspoons ground ginger
1/2 teaspoons crushed red chili peppers ground. If you like hotter add 1.5 Tbs
1/2 cup cold water
1/2 cup non-fat-dry milk
17-19mm sheep or collagen casings

Mix all the above (except casings) to the water for better mixing into the meat


 If you smoke this add 2 teaspoons
cure #1 to the meat/seasoning mixture before
stuffing into casings.

For a 5 lb batch just cut the recipe in half.
 
Thanks for the leads Guys.

My wife went to Seattle University some years ago and she loved the breakfast sausage that they served there.  It wasn't Farmer John's brand but it comes close to what it was.  We'd like a basic recipe to start from and try to reproduce the flavor she remembers.
