I've got my bird cut in half, stuffed with apples and onions, and somewhat spatchcocked, looks more like a turkey in bondage, but I'm ready to smoke in the morning. Adrian

What a BEAUTIFUL day for smoking! I hope it's as nice where you are all at as it is here in KC. I'm about two hours into my smoke and the turkey looks delicious! I just poured a can of sierra mist on it. I'm not sure what i'm gonna do next. Going to bake a sweet potato pie to eat with it. I'll post pics of the finished product later, til then, happy smoking. I gotta get back outside!!!

The half on the top grill was done right at four hours, still waiting on the other half. It seems to have stalled at about 155 degrees, got the sweet potato pie in the oven. All this work is making me thirsty, about time for a cold one!
 
Thanks Al, and thank you Chef Willie, not only for your compliments but for your guideance. This was an awesome smoke, and I wouldn't have known what I was doing without your help. Damn, this is fun! Now, what should I smoke next weekend? Oh yeah, getting married next weekend, thats OK I'll smoke something anyway. Thanks again, Adrian.

                                          P.S. I'll try to post some photos when I cut the bird. It's still resting, and so am I.
