Smoked Meatloaf

I haven't smoked for a while.  I just did a meatloaf.

2 lb beef, 1 lb medium sausage, 1/2 lb hot sausage, 1/2 lb chopped bacon, 2 cps bread crumbs, 1 med bell pepper, small onion, 1 tbs Rays Deer Rub

Smoked at 250 - 275f until center was 155f then basted with Calle's BBQ sauce. Finished when internal temp was 165f. I used wild cherry and plum wood.

The taters, I sprinkled some of my Rays Deer Rubs on them then I smashed them. Have to say they were great.

Meat loaf and mashed taters on the fork at the same time is priceless....... Some how my corn gets mixed in my taters......yum...

Hey Ray good to see you back again - Great looking meatloaf.

Did you ever get the KitchenAid cranking up some sausage?
 
Thanks for the great replies gang. It was excellent.  Really the only reason I mixed so much sausage was because I had them left over from other smokes and wanted to get it used up. But it turned out great.

Scarbelly:  No I never did.  For some reason my wife wasn't too keen on my using her Kitchen Aid for that.  I'm still workin it though. LOL

Most definetly.  I'm hoping to be heading out there by June.  It looks like I'm goin to Flag or Cottonwood for now.  I'm thinkin more Cottonwood cause Prescott isn't very far and from what I understand there's a better chance of gettin some kind of employment there. It still in the making.  Another holdup is the gas prices. UGH!
