First time Fatties

I am going to do a couple Fatties tonight for the first time.  I am doing a turkey one and a beef one.  My smoker is in picture, just wondering how much smoke you put on them.

Smoke them with thin blue smoke until  they  reach an internal temp of 165  degrees. Usually 2-4 hours depending on the temp and size of the fatty.

That's the beauty of this hobby! You can put on as much or as little as you want! Watch those strong woods though!!

I was asking because I have smoked a couple pork shoulders that I liked, but others thought the smoke flavor was too strong.  I guess that might be just personal preference and something that I am going to have to use trial and error for to know how much smoke for which products.

 

I will follow up with a Qview.
