Oh what a glorious day - Vegan for 44 days and today is to celebrate with Rib Eye Steak Brunch and RIBS for Dinner! The temp is holding steady at 228 and smells so good. 2 of the racks with rub, 1 naked (the Mrs. only likes BBQ sauce on hers and that'll be put on toward the end). Enjoy this blessed day!

Might be a couple ribs charge though.
If you feed those to NJ Troopers, they'll go away - it's only illegal if they actually arrest ya and how could they arrest me in good conscience with those in their belly?!
Sooooooo, my ribs are just about done and I need to hold them for about 3 hours. I have never had to hold ribs before. Suggestions on what to do with them to keep them from drying out and keep them warm?
