Well, I went shopping for a butt...none available in town worth buying, just loads of ham. Sooooo, stopped at Costco and saw this for the first time ever there. Dollar more a pound than a butt, but, what the hell...snagged one with a nice fat cap. Gave it an overnight rub with my fav pork seasoning mix and in the smoker it went at 11 A.M. along with the AMNS loaded with 3 rows of pecan. Managed to keep 240-250 in the Master Forge gasser on a somewhat windy day. I figured 7 hours for dinner at 6 P.M. Had sweet smelling TBS for about 4 hours. Stuck the Maverick probe in after 2 hours and settled back for the ride. Headed down to the Vets Club for beer thirty at 3 and came back at 4:30 to the fantastic aroma of pork que wafting in the air. Had a little stall at 150 IT....pulled it a half hour later at about 155 IT and let it rest in foil to hit 160 IT. In the meantime, fired off the scalloped potatoes and Bushes honey beans. I gotta tell ya....so well worth the 20 bucks. Some of the best pork I ever ate! Cut like butter, succulent moist meat with just the right amount of chew to it and as a bonus each chop had its own rib to gnaw on. We gourged on 2 chops each and have 4 more for later meals. If you ever see one of these I highly recommend it, you won't be disappointed.

Wow Wille that looks Fantastic! I have never seen a standing rib roast of pork offered for sale here...If i ever do you can guarantee i will grab one after seeing this excellent Q-View.

Dang that looks good Willie! I've never done one of those. Guess I'll have to put that on the list too. Awesome job Buddy!!!!

Leave it to you to spot that Bear....lol....I saw that myself and grabbed my chest....no man-boobs yet, thank God.

Thanks to all for the other posts...always looking for something unusual to throw in the smoke. Off to work, have a great Easter everybody....later
