Here in south Africa we starter the holidays 2 days ago so their is time for smoking.
first i made hot sausages (in the frigde smoking tomorrow) sirloin in whiskey i need 48 hours to cure . but i need food today so i pulled a small brisket and a small piece off 4 ribs and rub them with black pepper, coriander seed , mustard seed,garlic powder
at the time it was smoking i made a hot sauce to cook ribs for the for the last
hour in the oven
OK never mind.
Tomorrow another smoking day
