I finished my smoker build earlier this week (you can check it out in my Sig link below) and my family voted on brisket for the first test run.
Here's the brisket before getting wrapped up and stuck in the fridge overnight.
And here it is again getting ready to get taken out and tucked into the cooler for a nap:
I've got the drippings in the freezer so I can take most of the fat out, and hopefully use it to make an Au Jus. Once it's done resting, I'll have an update with the final result. Thanks for looking! :)
