Hello everyone, I'm not sure if I'm in the right place or forum but I just wanted to introduce myself as a new member. I'm still trying to navigate the site and figure things out.I would like to start by saying "thank you, thank you, thank you" to all for the great threads/posts.
My BBQ enthusiasm started about 2 years ago when I waited in line for 2 hours for tickets to a popular Rib-fest in a neighboring city to my own (because our city doesn't have one), only to be denied as I reached the front of the line. Apparently they had over sold the event and didn't bother to tell the poor slobs (Me) waiting in line till 2 hours later that they were at capacity and were not allowing any more entries. Pissed isn't the word to describe how mad I and a good hundred or so others were, I thought there was going to be a riot. Hindsight it served me right standing in line for (so so overpriced ribs) I have only myself to blame. Needless to say, this is where my quest began. I vowed to never again wait in line for overpriced mediocre BBQ ever again!!!! One small problem thou I wasn't really good at BBQing anything more than burgers, steaks and the occasional chicken breast and a personal BBQ chef (LOL) was way out of my budget. So started my journey in to BBQ-and more importantly smoked BBQ. I started out reading all your wonderful threads/posts here and the knowledge I gained was invaluable. Enough to give me the confidence to start smoking ribs on my 22" Weber kettle grills. With great success. Which has now lead me to build my own UDS this year. (finished it 2 weeks ago) To give you all some back round I have 2 -22" Weber kettles a Weber Genesis Gas, my newly built UDS and a 22" Weber Smokey Mountain which I'm assembling now (helps to have a family member work for Weber) and a Charbroil horizontal barrel grill that I'm working on. (cause i garbage picked it) I cant tell you enough how much I love doing this and how pleased I am with the great advice and tips from you site. I was able to smoke 15 slabs of baby backs on 3 22" kettle grills last year for a party and they turned out awesome. Well sorry for the essay but it had to be told....LOL Thanks again, I look forward to being an active member (if you'll have me). Also I'm looking for great homemade Rub and BBQ sauce recipes if anyone has some good ones i would really appreciate it.
Here are some ribs from the Weber kettles came out great cant wait to get the smokers up and running. below that is a pic of my UDS I just finished and of course my lil guy I'm starting him out young. I had to build a heat shield around my UDS so he wouldn't get burned. It really works too, cool to the touch even when the drum was running at 375 during the test burns. And I know "watch your kids"...but it only takes once and on these longer 3-6 hour smokes I needed extra precaution....I have never seen one done like this before. Thanks let me know what ya think!
