I keep looking at Bear's q-view attached to his signature and got jealous so I purchased some pork loin and decided I wanted to make some Canadian Bacon and some Smoked Pork Chops of my own.  Here's how I did it.

Cut into smaller pieces for easier smoking/curing.

I then measured each piece and rubbed 1 T of brown sugar and 1 T of Tenderquick per pound for each piece.

Then I vacuum sealed and cured in the fridge for about 10 days (probably longer than needed, but that was the next time I had time to smoke it.

After curing time was up I washed the pork loin and soaked in for 1/2 hour in cold water.

Then I rubbed the two I wanted to cut into smoked pork chops with Song of the South rub (look it up on google)

The one I wanted for Canadian Bacon I sprinkled with Cinnemon and then put brown sugar and maple syrup on the outside before smoking.

I then smoked it.  Here's the finished product.
