Good Morning Everyone, getting some Baby Backs all ready for today's smoke...   Almost done with them rubbed down, now let them the rest till 1pm, then on the MES 40... For the 2-2-1 Method.

Do you spritz your Ribs with juice every hour?? Just wondering about if I should or not..

I used to, but I stopped during the Winter, because of so much heat loss.

Now I wait until after the first hour, and then put boiling water in my water pan instead.

Then I add some juice when I foil them.

Looks like you are off to a good start with a great looking bunch of Baby Backs...
 
This is what I am going to finish them up with...

BR’s Blackberry Chipotle BBQ Sauce

Ingredients:
• 3 cups ketchup
• ½ cup chopped onion
...• ½ cup water
• 1 can chipotle chilies (smoked jalapenos), chopped
• ½ cup brown sugar
• 2 tablespoons olive oil
• 2 tablespoons apple cider vinegar
• ¼ cup honey
• ½ cup - yellow mustard
• 2 cups blackberries
• 1 teaspoon red pepper flakes
• Sea salt, to taste
• 1 cup Thick & Chunky Salsa

Puree Blackberries, onions and chipotle peppers. Add all ingredients together in a pan and simmer for 1 hour.
Let cool and it is ready… Great Flavor with a little kick

Looks great pote! I put extra br sugar on the ribs just before I put them in the smoker, it keeps them moist so you don't have to spritz.
 
Starting the Pre-Heat. It is 49 outside right now here in Joetown..  Have my Citrus mix in the water pan, not sure if it add's anything, but it damn sure smells good.

We have 30 min's left till we unfoil smear some sauce and go for the last hour...  We just found some Corn on the cob at the Store. I do not know where they imported it from but it looks great.

Thanks everyone.. Please try the sauce, or tell me how to make it evev better. Right now it is pretty damn good.
