You want it to be 160 it, and that should take about 3 hrs @225
I agree 2 1/2 to 3 hours. I usually don't even probe them any more. I just let them go until the bacon is crispy.
If the stuffin' is allready cooked, Then i'm with these guys, if the bacon is done, it's done!
Trying my first fatty tomorrow. Thanks for the info on the time and temp. Does it matter if I do it the same time as I am doing my pastrami?
