just wanted to share some pics of my meals last week....looked pretty tasty.

i made some chimichangas with fried ice cream. i know its not really smoking, i did cook the hamburger in the skillet, on the grill to get a smoky flavor....just to make it count. haha.  But they turned out wonderful, especially for a first attempt.

sorry man, no slice pics......i wish i had. but, it was getting close to game time and got myself in a hurry. but, it was beautiful...lol

the fried ice cream was real easy actually.....i had never done it before....

but

main thing...take it in steps

you take a glass dish and put it in freezer to keep ice cream cold.....then you scoop out however many "balls" you want. i formed them with my hand, about the size of golf balls. then, into the dish and back into freezer for a few min to harden back up.

next, make a breading and an egg wash. my breading was just crushed cornflakes, cinnamon, and some sugar. take the ice cream out of freezer, dip in egg, dip in breading. i repeated this to make sure i had good coverage of breading and couldnt see any ice cream. then...back into the freezer. i did all this before dinner, so the breaded ice cream sat in freezer for at least an hour. they were pretty solid before i put into fryer.

i heated my fryer to about 360...you could go a little higher if you wanted, but wouldnt  recommend lower. i also used my deep fryer, but im sure you could use a pan if you wanted to. once heated, i dropped ice cream in 1 at a time at first, then 2 at a time. i only let them fry for around 45-60 sec until brown. if ice cream starts "leaking", get em out....they r ready.

i served with whip cream and cinnamon on top......

it was a lot easier than i expected, and will for sure do it again.

the chimichanga and ice cream really scored me some points on the date i had over, especially the ice cream.....she was putty in my hands after that...lol....
