Apple Smoked Pulled Chicken w/ Qview

I decided to throw a couple of birds in the MES yesterday. This is the first run with whole chickens on the electric. I have done plenty on my WSM. The finished poduct was great even though I was hoping for more color like I get on the charcoal smoker. The smoke flavor was pretty good for my taste. I used 3-4 handfuls of Apple chips.

It looks real good from here too. I really like pulled chicken. Here's something you may want to try next time. Fry a few pieces of bacon in a pan until crispy, dry on a paper towel. Now take the chicken skin, chop it in small pieces and fry in the bacon grease until crispy. Dry on paper towel. Chop the bacon up into small pieces, combine with the skin & toss with the pulled chicken. It really kicks it up a notch.

I have the exact same smoker and chips.  I really like the smoker.  I have not done chicken with apple chips but I am sure it is good.  What I like to use on the whole chickens in that smoker is a combination of hickory and mesquite chips because it gives it a very strong smokey flavor that I love.  Did you by any chance stuff the inside with apples?  I bet that would add to the sweetness..
