See.... you poke your head out from that winter hibernation and find all kinds of stuff you missed! heh-heh

 

Thanks John, it was by far the best butt I have been able to produce so far. I really like the texture you get by foiling it mid smoke then unfoiling it for the last couple of hours. I guess it's kind of like doing 3-2-1 ribs... lol. Just used the last of the meat last night to make some killer green chili enchiladas.
