Windy day and bacon wrapped chicken breasts

Well, I have found that windy days don't treat me right when it comes to smokin on my BBQ Pro. But, I figured I'd do it anyway! I had to be in the yard giving the dog his spring shave and bath. So......why not fire it up!!!

I brined three boneless chicken breasts in a solution of water, salt, sugar, onion powder, and garlic powder.

Then I gave them a coat of dijon mustard and a rub of herb blend, onion powder, garlic powder, paprika, and celery salt.

Next, my camera died! So, I don't have a pic of the wrapped breasts prior to going in the smoker.........To the charger for the battery and to the smoker for the breasts!

After a lil charge and some smoke here is where I was at.

I gave them two hours of cherry wood smoke and two hours without at between 225 and 230 degrees. After four hours I was at 168. My wife had the taters and asparagus ready so it was time to dig in!

The next pic caught to much glare from the plate but the smoke ring was super nice!

All I can say is I wish I had a plate like this every night!!!!

Oh......and just in case any of you were wondering the dog did get shaved and bathed! The poor guy didn't enjoy it but neither did I. And we didn't have the kids home so I got a nice left-over lunch for tomorrow!

I can honestly say it was the BEST chicken breast I have ever had! I read up on Jeff's newsletter about bacon wrapped chicken breasts and had to give it a try! I added my own twist on it and it turned out great! Plus, we always seem to have chicken breasts in the freezer and you know how boring the usual chicken dishes are!
