Ok gotta do it again cept this time with cure #1

 

Mixed and added 2 Tbs buckwheat flour and 1.5 Tbs mustard seed.

Going with smaller diameter sheep casings.  Only doing 3 lbs

My fav hang/bloom spot is tied up so i gotta improvise and use my wifes cooling racks. Better hurry before she gets home from work wife.gif

Got the cure #1 LJ all cut and vac sealed ready to head south.
