Hi everybody, today was my inaugural smoke with my new Horizon 16" (full review to come later).  Yesterday I seasoned it up, so today was the first smoke.  I went with pork spareribs and threw in some CSRs as well just to test it out.  I didn't have high expectations since I'm learning the controls on this new smoker, but it came out great!  I used a 3-2-2, and I think I ran a little hot early on, but no complaints for a first try. It was really windy here in Portland so I had my hands full with the temps.  I used cherry wood which really created nice color and flavor. Here's some pics:

I went with Tulsa Jeff's rub, and his sauce as well.  Both are great, the sauce is incredible and I highly recommend it.

Below is taken after two hours, the right side is closer to the firebox and you see I overdid it a little early on...

The finished product.  The rub created a nice bark, maybe a little more than I'd like but I think I was a little over 250 the first hour.

Hey, welcome to the SMF from a fellow Oregonian. I'm down here in Albany and hear ya about the wind, been fighting it & the rain for a coupla months now. Nice looking rig and a great job on your first smoke. Ribs look delish....I'm becoming a fan of cherry wood myself.
 
Welcome to the addiction neighbor. These guys are great and I have learned so much from them over the few months I have been here. Dont know where you get your meat at but I have found United Grocers/Cash and Carry is good prices and always fresh if you havent checked them out I would. That reminds me gotta go get some more ribs for a cookout now that the weather is warmer. Just wish this wind would calm down a bit.

If that's your first smoke in your new smoke you sure didn't leave a lot of room for improvement.  Going to be hard to beat the first one.  Glad to have you around and great Qview

 Great Qview and good job on the new smoker. If that was your first time your gonna make a lot of friends real quick! Better get a bigger smoker! P.S. make them but the meat! and BEER
 
Those ribs look really good! Never tried cherry I guess I'll have to, I mix apple and hickory but I'm always open to something new. Keep the picture coming.

Later I plan to do a detailed review on my Horizon Smoker, I know a few people have them or are considering getting them and it never hurts to offer my experience--I'll just say the it's been great so far.  These forums were really helpful, I spent weeks reading the tips and tricks from you guys which I applied. The only problem is there are so many ideas I'm getting on things to smoke, from turkey legs to briskets, I don't know what to do next!
