The smokers been goin since 4:30am! I actually woke up with no alarm at 3:30am cause I was so pumped about getting my smoke on! It's gonna be a good day!
Well you guys are sure changing my timeline for the 20th. My ECB did a brisket in 3-4  hours a while back, but me thinks it ran hotter than the Char-Broil offset does. What do you think about keeping it hotter which I can do by burning oak or natural hardwood charcoal on top of the briquets..   I'm thinking 240 for 4 hours or so..

If you are doing it on your offset Char-Broil 240 won't get it done in 4 hours. I had my Bbq Pro offset at 240 all day and my brisket came off at 4pm. That's 11 hours at 240. Everyone I've talked to says to let go low and slow!

But, how much does your brisket weight? That may make a difference. Mine was a 6lb.
