burger jerky maker, now going into smokin

I have been making burger jerky for about a yearand having a great time.  Now I am taking a big jump into smokin! can't wait to get going.  FedEx just delivered my new smoker SmokinTex 1400.   Can anyone tell me how to season my new unit, and any care as far as cleaning if needed.

I'm sure it will come with some manufactures instructions but what I do for the first smoke on my units is clean out the smoker with a wet rag or something to try and get any grease or anything that might be on there removed and then spray it with Pam and then I turn the smoker on and bring it up to temp for a few hours. I usually start low and work my way up so I can play with the unit and get a feel for how fast I can get it to go up and down and where I am going to need to be set to maintain temps around 150 -175 and then I will bring it up to around 225-250 and play with the adjustment for a while then I will bring it up to 300+ to make sure it will burn out any bad stuff that still may be in the unit from the manufacturer. Everyone probably does it a bit different but that's what I do.

Oh and last but not least bring it back down to temp and throw something on the smoker to cook.

I have been making jerky with burger and mixing in game meat.  I have made jerky with bunny, caribou and moose all mixed about 50% with ground burger.  I can never seem to keep it around.  you will love the difference in the flavor when smoking instead of dehydrating.  try different woods and expiriment a lot.  you have come to the right place to learn and share.  great folks here.

I have that same unit. Been using it for a couple of years with some good success. Their customer service is very good.


Let me save you from a whole bunch of trial and error with using the chunks. Order the 6 X 8 AMNS and some different flavored dust from Todd. I stopped using the chunks after the first time I tried the AMNS. It fits on the left side of the chunk box.  You can control how much smoke you get that way and almost never have to open the door during a smoke.

First off welcome to SMF. You'll like it here cause there are alot of really good folks that would just love to help you with anything to do with smoking. Now we like having new folks here to give a new prospective on some of the ways we do things around here.
