It's great to see you back haunting these electronic pages.  Now that's one fine looking hunk of pork.  I always try to save the burnt parts from the commoners who don't understand the niceties of this craft, durn flatlanders.  Gonna have to give your version a good run at, well maybe this weekend, but, sadly, it'll be in my GOSM.  Some of us have to keep the faith.

Now, do you have a link for those gloves?

Awesome looking butt. I think I can smell it from here! I have always injected mine too. I know a lot of folks on here say its not needed, but I prefer to do it anyways. I have never foiled mine on the smoker either, I know many do, but I really like to keep the bark from getting soft. Either way that looks great!
Thanks Wylie!  I've tried not foiling because I love the bark so much (who doesn't), but after 3 attempts at not foiling I hit major stalls and even had one butt go as long 20+ hours!!  Each time I tried to go without foil I had similar luck! lol  The foiling doesn't ruin it or anything, there is still a really nice bark developed before hitting 165° it just makes it a little softer, which happens anyway if you have to foil it and cooler it for a few hours.  I've not given up on not foiling and may give it a try  in the next week or two.

I used to be so against injecting but since I've experimented a little I've gotten to where I really like the results.

     Dave, thanks!  Nothing wrong with that GOSM for sure!  But I have to say, this UDS is one smokin' machine.  lol  It's all the same when the propane tank is empty or you're out of charcoal! haha

My stomach growled immediately after seeing this as pulled pork is one of my very favorites!   I'll be doing one next wk after the new smoker arrives.
     Congrats on the new smoker!  PP is my favorite as well.  What kind of smoker did you order?  Don't forget the Qview!

Bigdog, click the UDS Build link in my signature, it's a lengthy thread on my build.  It's really a simple process and requires minimal tools (drill, adjustable wrench, pliers etc).  The most difficult part I had was finding a drum.  There are several build post also in the UDS, Smoker Build section of the forum.  If you can find a drum with no epoxy liner with a removable lid you're golden!  If you have any questions or need help please feel free to message me anytime.
